Veggie Pesto Focaccia Sub with Zero Maida Focaccia Sourdough

Ingredients:

The Health Factory's Zero Maida Focaccia Sourdough Bread

Bell peppers (sliced) – ½ cup

Cottage cheese (cubed) – ½ cup

Olive oil – 1 tbsp

Salt – to taste

Black pepper – to taste

Tomato (sliced) – 1 medium

Lettuce (chopped) – ½ cup

Homemade pesto dip – 2 tbsp

Instructions:

Slice the Bread:

Slice The Health Factory’s Zero Maida Focaccia Sourdough Bread horizontally into two equal halves.

Sauté the Vegetables:

Heat a pan over medium-high heat and drizzle in 1 tbsp olive oil. Add the sliced bell peppers, season with salt and pepper, and sauté until slightly softened.

Add Cottage Cheese:

Add the cottage cheese cubes to the pan and toss gently. Cook for 2-3 minutes, stirring occasionally, until lightly golden. Set aside.

Layer the Sandwich:

On the bottom half of the bread, spread half of the sautéed bell pepper mixture. Layer with golden cottage cheese cubes, tomato slices, and chopped lettuce.

Prepare the Pesto Dip:

Blend ¼ cup toasted almonds, 2 cups basil leaves, 2 garlic cloves, and ⅓ cup olive oil until smooth. Season with salt and pepper to taste.

Assemble and Serve:

Spread a generous layer of pesto dip on the top half of the bread and place it over the bottom half to complete the sandwich. Serve warm or at room temperature.
