Grilled Cheese & Tomato Soup with Zero Maida Whole Wheat Bread
Ingredients:
For the Tomato Soup:
Red bell pepper – 1 (diced)
Ripe tomatoes – 2 (diced)
Small onion – 1 (diced)
Beetroot – 1/2 (diced)
Garlic cloves – 3-4 (peeled)
Oil – 1 tbsp
Curry leaves – 5-6
Milk – 1/2 cup
Salt & pepper – to taste
Fresh coriander – for garnish
For the Grilled Cheese:
Zero Maida Whole Wheat Bread – 4 slices
Cheese slices – 4-6 (as preferred)
Oil – 1 tbsp (for toasting)
Instructions:
Prepare the Roasted Vegetable Base:
Toss the bell pepper, onion, beetroot, tomatoes, and garlic in oil.
Roast in an air fryer or oven at 180°C (350°F) until tender (about 10 minutes).
Blend the Soup:
Transfer the roasted vegetables to a blender. Add curry leaves and a splash of milk.
Blend until smooth. Pour into a bowl and garnish with fresh coriander.
Make the Grilled Cheese:
Heat oil in a pan. Place a slice of bread on the pan and layer with cheese.
Cover with another slice of bread and toast until golden brown and the cheese melts.
Serve:
Slice the grilled cheese and serve it with the hot tomato soup.
