Grilled Cheese & Tomato Soup with Zero Maida Whole Wheat Bread

Ingredients:
For the Tomato Soup:
- Red bell pepper – 1 (diced)
- Ripe tomatoes – 2 (diced)
- Small onion – 1 (diced)
- Beetroot – 1/2 (diced)
- Garlic cloves – 3-4 (peeled)
- Oil – 1 tbsp
- Curry leaves – 5-6
- Milk – 1/2 cup
- Salt & pepper – to taste
- Fresh coriander – for garnish
For the Grilled Cheese:
- Zero Maida Whole Wheat Bread – 4 slices
- Cheese slices – 4-6 (as preferred)
- Oil – 1 tbsp (for toasting)
Instructions:

Prepare the Roasted Vegetable Base:
- Toss the bell pepper, onion, beetroot, tomatoes, and garlic in oil.
- Roast in an air fryer until tender.

Blend the Soup:
- Transfer roasted vegetables to a blender.
- Add curry leaves and a splash of milk.
- Blend until smooth.
- Pour into a bowl and garnish with coriander.

Make the Grilled Cheese:
- Heat oil in a pan.
- Place a slice of bread on the pan and layer with cheese.
- Cover with another slice of bread.
- Toast until golden brown and cheese melts.

Serve:
- Slice the grilled cheese and serve with the soup.
