Grilled Cheese & Tomato Soup with Zero Maida Whole Wheat Bread

Ingredients:

For the Tomato Soup:

  • Red bell pepper – 1 (diced)
  • Ripe tomatoes – 2 (diced)
  • Small onion – 1 (diced)
  • Beetroot – 1/2 (diced)
  • Garlic cloves – 3-4 (peeled)
  • Oil – 1 tbsp
  • Curry leaves – 5-6
  • Milk – 1/2 cup
  • Salt & pepper – to taste
  • Fresh coriander – for garnish

For the Grilled Cheese:

  • Zero Maida Whole Wheat Bread – 4 slices
  • Cheese slices – 4-6 (as preferred)
  • Oil – 1 tbsp (for toasting)

Instructions:

  1. Prepare the Roasted Vegetable Base:

    • Toss the bell pepper, onion, beetroot, tomatoes, and garlic in oil.
    • Roast in an air fryer until tender.
  2. Blend the Soup:

    • Transfer roasted vegetables to a blender.
    • Add curry leaves and a splash of milk.
    • Blend until smooth.
    • Pour into a bowl and garnish with coriander.
  3. Make the Grilled Cheese:

    • Heat oil in a pan.
    • Place a slice of bread on the pan and layer with cheese.
    • Cover with another slice of bread.
    • Toast until golden brown and cheese melts.
  4. Serve:

    • Slice the grilled cheese and serve with the soup.
