Shahi Tukda with Zero Maida Milk Bread
Ingredients:
For the Sugar Syrup:
Sugar – 1/2 cup
Water – 1/4 cup
Cardamom pods – 2–3 (crushed)
Saffron strands – a pinch (optional)
Rose water – 1/2 tsp (optional)
For the Rabri:
Full-fat milk – 2 cups
Condensed milk – 2 tbsp (optional)
Sugar – 2–3 tbsp
Cardamom powder – 1/4 tsp
Saffron strands – a pinch
Rose water – 1 tsp (optional)
For Garnishing:
Almonds & pistachios – sliced
Dried rose petals – optional
Silver leaf – optional
Instructions:
Prepare the Rabri:
Boil milk and let it simmer, stirring occasionally until reduced by half.
Add condensed milk (if using), sugar, cardamom powder, saffron, and rose water.
Let it thicken to a creamy texture. Set aside.
Make the Sugar Syrup:
Heat sugar, water, crushed cardamom, and saffron in a pan.
Simmer until the syrup slightly thickens. Add rose water at the end.
Toast the Bread:
Cut Zero Maida Milk Bread into triangles.
Shallow-fry in ghee until golden brown, or toast in an oven/air fryer for a lighter version.
Assemble the Shahi Tukda:
Dip fried or toasted bread pieces in warm sugar syrup for a few seconds.
Arrange on a serving plate and pour chilled or warm rabri over the top.
Garnish & Serve:
Sprinkle sliced almonds, pistachios, and dried rose petals.
Decorate with silver leaf if desired. Serve warm or chilled.
