Shahi Tukda with Zero Maida Milk Bread

Ingredients:

For the Sugar Syrup:

  • Sugar – 1/2 cup
  • Water – 1/4 cup
  • Cardamom pods – 2-3 (crushed)
  • Saffron strands – a pinch (optional)
  • Rose water – 1/2 tsp (optional)

For the Rabri:

  • Full-fat milk – 2 cups
  • Condensed milk – 2 tbsp (optional)
  • Sugar – 2-3 tbsp
  • Cardamom powder – 1/4 tsp
  • Saffron strands – a pinch
  • Rose water – 1 tsp (optional)

For Garnishing:

  • Almonds & pistachios – sliced
  • Dried rose petals – optional
  • Silver leaf – optional

Instructions:

  1. Prepare the Rabri:

    • Boil milk and let it simmer, stirring occasionally until reduced by half.
    • Add condensed milk (if using), sugar, cardamom powder, saffron, and rose water.
    • Let it thicken to a creamy texture.
  2. Make the Sugar Syrup:

    • Heat sugar, water, cardamom, and saffron until it slightly thickens.
    • Add rose water at the end.
  3. Toast the Bread:

    • Cut Zero Maida Milk Bread into triangles.
    • Shallow fry in ghee until golden brown. (Alternatively, toast in an oven or air fryer.)
  4. Assemble the Shahi Tukda:

    • Dip fried/toasted bread in sugar syrup for a few seconds.
    • Arrange on a plate and pour rabri over it.
  5. Garnish & Serve:

    • Sprinkle almonds, pistachios, and dried rose petals.
    • Serve warm or chilled.
