Mumbai Street Style Masala Pav with Zero Maida Bombay Pav
Ingredients:
Zero Maida Bombay Pav – 4
Butter – 2 tbsp
Cumin seeds – 1 tsp
Large onion – 1 (finely chopped)
Large tomato – 1 (finely chopped)
Green bell pepper – 1 (finely chopped)
Ginger-garlic paste – 1 tsp
Green chilies – 2 (finely chopped, optional)
Turmeric powder – 1/2 tsp
Red chili powder – 1 tsp
Pav bhaji masala – 1 tsp
Salt – to taste
Fresh coriander leaves – chopped
Lemon wedges – for serving
Instructions:
Prepare the Masala:
Heat 1 tbsp butter in a pan over medium heat.
Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Stir in ginger-garlic paste and cook for another minute.
Add chopped bell pepper and cook for 2–3 minutes.
Add chopped tomatoes and cook until they soften and oil separates.
Mix in turmeric, red chili powder, pav bhaji masala, and salt. Cook for 2–3 minutes.
Add a splash of water if needed and cook until thick.
Stir in chopped coriander and remove from heat.
Prepare the Pav:
Heat a tawa or flat pan over medium heat.
Slice the pavs in half horizontally.
Spread butter on the cut sides and toast until golden and crispy.
Assemble the Masala Pav:
Spread a generous layer of masala on the toasted sides of the pavs.
Press the halves together like a sandwich.
Serve:
Serve hot, garnished with coriander and lemon wedges on the side.
