Ingredients:

  • 2 slices of Zero Maida Protein Bread
  • 1 cup canned chickpeas (drained and rinsed)
  • 2 tablespoons plain yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

  1. Prepare the Chickpea Spread:
    • In a bowl, mash the chickpeas with a fork, leaving some chunks for texture.
    • Add plain yogurt, olive oil, lemon juice, cumin powder, paprika, salt, and pepper. Mix until well combined.
  2. Toast the Bread:
    • Toast the slices of Zero Maida Protein Bread to your desired level of crispiness.

Aloo Jalapeno Tikki Burger with Zero Maida Burger Buns

Ingredients:

  • 2 Zero Maida Burger Buns
  • 2 large potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 1 jalapeno, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves, chopped
  • 2 tablespoons oil for cooking
  • Butter for toasting the buns
  • Green chutney
  • Tamarind chutney
  • Thinly sliced cucumber, tomato, and onion
  • Lettuce leaves
  • Cheese slices (optional)

Instructions:

  1. Prepare the Aloo Jalapeno Tikki:
    • Heat 1 tablespoon of oil in a pan over medium heat.
    • Add cumin seeds and let them splutter.
    • Add finely chopped onions and sauté until they turn golden brown.
    • Add ginger-garlic paste and sauté for another minute.
    • Add chopped jalapeno, turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.
    • Add the mashed potatoes and salt. Mix thoroughly to combine all ingredients.
    • Add fresh coriander leaves and mix well.
    • Let the mixture cool slightly, then divide it into equal portions and shape them into round patties.
  2. Cook the Patties:
    • Heat the remaining oil in a pan over medium heat.
    • Shallow fry the potato patties until they are golden brown and crispy on both sides. Set aside on paper towels to drain excess oil.
  3. Prepare the Buns:

Ingredients:

  • 1 Zero Maida Pizza Base
  • 1/2 cup pizza sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup mushrooms, sliced (optional)
  • 1/4 cup black olives, sliced (optional)
  • 1/4 cup red bell pepper, sliced
  • 1/4 cup yellow bell pepper, sliced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 220°C (425°F).
  2. Prepare the Pizza Base:
    • Place the Zero Maida Pizza Base on a baking sheet or pizza stone.
  3. Add the Sauce and Cheese:
    • Spread the pizza sauce evenly over the base.
    • Sprinkle the shredded mozzarella cheese evenly over the sauce.
  4. Add the Toppings:
    • Arrange the sliced mushrooms, black olives, red bell pepper, and yellow bell pepper evenly over the cheese.
  5. Season the Pizza:
    • Drizzle olive oil over the top.
    • Sprinkle dried oregano and basil evenly over the toppings.
    • Season with a little salt and pepper to taste.
  6. Bake the Pizza or Cook it on a Tawa 
    • Bake in the preheated oven for 5-8 minutes, or until the cheese is melted and bubbly, and the edges of the pizza base are golden brown.
    • If you are using a tawa, cover the pizza with a bowl and cook it for 4-5 mins on a low flame and then microwave 30 seconds for the cheese to melt.
  7. Garnish and Serve:
    • Remove from the oven and let cool for a minute.
    • Garnish with fresh basil leaves if desired.
    • Slice and serve hot.

Mumbai Street Style Masala Pav with Zero Maida Bombay Pav

Ingredients:

  • 4 Zero Maida Bombay Pavs
  • 2 tablespoons butter

  • 1 large tomato, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2 green chilies, finely chopped (optional)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon pav bhaji masala
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Lemon wedges for serving

Instructions:

  1. Prepare the Masala:
    • Heat 1 tablespoon of butter in a pan over medium heat.
    • Add cumin seeds and let them splutter.
    • Add finely chopped onions and sauté until they turn golden brown.
    • Add ginger-garlic paste and sauté for another minute.
    • Add chopped green bell pepper and sauté for 2-3 minutes until they soften.
    • Add chopped tomatoes and cook until they become soft and the oil starts to separate.
    • Add turmeric powder, red chili powder, pav bhaji masala, and salt. Mix well and cook for 2-3 minutes.
    • Add a little water if the mixture is too dry and cook until you have a thick masala.
    • Add chopped coriander leaves and mix well. Remove from heat and set aside.
  2. Prepare the Pav:
    • Heat a tawa or flat pan over medium heat.
    • Slice the Zero Maida Boombay Pavs in half horizontally.
    • Spread butter on the cut sides of the pavs.
    • Toast the pavs on the tawa until they are golden brown and crispy.
  3. Assemble the Masala Pav:
    • Spread a generous amount of the prepared masala on the toasted sides of the pavs.
    • Press the pav halves together.
  4. Serve:
    • Serve the Masala Pav hot, garnished with fresh coriander leaves and lemon wedges on the side.

Ingredients:

  • 4 slices of Zero Maida Whole Wheat Bread

  • 1 green chili, finely chopped (optional)
  • 1 capsicum, finely chopped
  • 1 small onion, finely chopped
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon red chili flakes
  • Fresh coriander leaves, chopped
  • Butter for spreading and cooking
  • Tomato ketchup (optional, for serving)

Instructions:

  1. Prepare the Cheese Mixture:
    • In a bowl, combine grated cheese, finely chopped capsicum, onion, and green chili (if using).
    • Add cumin powder, chaat masala, and chopped coriander leaves.
    • Mix well until all ingredients are evenly distributed.
  2. Prepare the Bread:
    • Spread a thin layer of butter on one side of each slice of Zero Maida Wholewheat Bread.
  3. Assemble the Sandwich:
    • Spread a generous amount of the cheese mixture on the unbuttered side of two bread slices.
